If you add mostly water you should flush the system immediately as it will cause corrosion in the block. You need to add coolant in the water to protect your car at all times.

Also cold water poured into a hot engine is not cool as the heat difference/change can cause the block to be stressed. Kinda like putting hot water on a frosty windscreen! I like to have the engine running and slowly add water so that the cold water is mixed and pumped around the engine slowly. This way it brings the temperature of the whole lot down gradually meaning less stress to the heads and block.

A thick towel over the radiator cap and quick movements will have the cap off no matter the temp! ;) You can leave the car with its ignition on (engine off) so that the thermo fan keeps running as this will cool the radiator down more quickly so you take the cap off sooner.

Better yet maintain your car so this does not happen :D
